Here’s how to make them step by step.


Ingredients

For the Chicken:

  • 2 lb boneless chicken thighs or breast, cut into cubes
  • 3 tbsp chipotle peppers in adobo sauce (blended into a paste)
  • 2 tbsp fresh lime juice
  • Salt, to taste
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • Oil for cooking

For the Chipotle Sauce:

  • 3 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1-2 tbsp chipotle peppers in adobo sauce (blended)
  • 1-2 tbsp lime juice
  • 2-3 tbsp water (to loosen sauce to desired consistency)

For the Salsa:

  • 1 large red onion, diced
  • 2 tomatoes, diced
  • 2 tbsp lime juice
  • 1 tbsp fresh cilantro, chopped
  • 1 jalapeño, diced (remove seeds for less heat)

For Assembling:

  • 15-20 mini tortillas
  • 2 cups mozzarella cheese

Method

1️⃣ Marinate the Chicken:
In a bowl, combine the chipotle paste, lime juice, salt, black pepper, garlic powder, and onion powder. Mix well. Add the cubed chicken and toss until each piece is coated evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).
